It is with great sadness that we announce the passing of our dear friend and colleague Tao

It is with great sadness that we announce the passing of our dear friend and colleague Tao (Taweesak Trakoolwattana), who peacefully passed away last night, surrounded by his loving family in Thailand, after a brave battle against cancer. Tao was a beautiful soul, a very special friend, a gentleman, brilliant chef, mentor and leader. He personified grace, kindness and hospitality. We all truly loved him. He was like a brother to me.

Tao and I first met 25 years ago, and he was the person who encouraged me to set up Saba. He created our first menus and was by my side when Saba Clarendon Street opened in 2006, developing the Saba Restaurant Group to 6 venues. His stamp is everywhere, he was a mentor and father-figure to all of our team. 

Winning the Best Asian Cookbook in the World in Paris in 2013 was a very proud moment for Tao, who insisted that the proceeds from the sale of the book were donated to the Thai Red Cross and the St John’s Ward in Crumlin Children’s Hospital. It was his professionalism and unwavering commitment to the highest standards that drove the team at Saba to win awards and accolades year on year. A natural teacher, he absolutely loved his cookery classes, telling all our customers how Thai cuisine was the best food in the world! 

Tao returned to Thailand in 2020 while battling stage 4 cancer but made an incredible recovery and came back to open Saba on South William Street in 2022. Sadly, his illness returned in early 2024. Despite undergoing challenging treatment, Tao remained deeply connected with the team in Dublin, offering his guidance and expertise. He played a key role in developing the Saba Thai range for Dunnes Stores Simply Better, a testament to his dedication and passion.

From his initial diagnosis right up until the end, Tao fought with bravery and dignity that inspired us all. His deep Buddhist faith was always a great comfort to him.

His pain and suffering are now over. He is at peace, but his spirit and legacy will live on forever in Saba. We will all miss you Tao. May your gentle soul rest in peace.
