Victor is our head mixologist in Saba on Clarendon Street and is responsible for the newest cocktail creations that are always appearing on our menu.
What is your name?
Hello, my name is Victor.
Where did you grow up?
North Dublin
What are your hobbies?
Some of my hobbies include cycling and reading. I also enjoy playing card games.
How long have you been working with SABA?
I have been working at Saba on Clarendon Street for just over 4 and a half years now and I can’t believe how the time has flown by.
What are your favourite starters and main dishes to get from SABA?
My favourite starter would have to be vegetable tempura, fried vegetables have always been one of my favourites and Saba does it perfectly.
For the main course, my favourite has to be Xao Hao Lo with chicken. It is for sure my go to dish, I eat it few times a week.
What is the most popular dish ordered in SABA?
I would imagine it’s the Massaman curry which is another dish that I love. I also enjoy it with prawn and some added chillies.
What is the most common question you get asked by guests?
As I work in the bar area, it is usually a request for the drinks list.
What is your favourite aspect of working in SABA?
We have an awesome, friendly team at Saba. I enjoy my shift every time I put on a uniform. I also love creating new cocktails and tasting new products, I love that the possibilities for creativity are endless.
Have you any funny stories that happened while working?
One of the barmen, Ronan, was off one of the days. So I picked up the phone at reception to ‘Hey it’s Ronan’. I said “WHATSSS THE STOORRYY BRO”. Then he said ‘can I book a table for tonight?’ It wasn’t my workmate, it was actually a customer.
What is your favourite restaurant in Dublin City?
There are so many options that I can’t think of a favourite, it usually depends on what I’m in the mood for.
