Pumpkin carrot and orange soup with crab meat and sweet basil


200g      Sliced pumpkin                           2dsp        Sunflower oil

200g      Sliced carrot                                 2               Bay leaves

1 Half of an orange                                     ¼ tsp       Salt

100g      Sliced  onion                                 A pinch   Ground white peppercorn

500ml    stock

10g        Crab meat

2            Sweet basil leaves

Cooking method:

Bring a saucepan to medium heat and add the oil.

Add the onion and bay leaves, stir until there is a nice aroma then add the pumpkin, carrot and orange.

Stir for a minute and then add the stock. Slow cook until carrot and pumpkin become soft.

Season with salt and ground white pepper.

Remove the bay leaves and put in a blender and pass through the sieve

Bring a saucepan to a medium heat, add a little oil to sear the crab meat. Heat thoroughly.

Put on top of the soup and garnish with sweet basil.
