The third dish that Brian O’Driscoll cooked in the Saba Cooking Masterclass was Phad Prik Sod Nua.
Phad Prik Sod Nua*** Thai
Stir-fried Beef with Chillies and Mushrooms
Serves 4
Ingredients
- 480g of beef fillet, sliced
- 3dsp sunflower oil
- 3 cloves garlic, crushed, chopped
- 80g onion, sliced
- 80g spring onion, cut to 4cm
- 100g mixed peppers, sliced
- 2 chillies, sliced
- 100g button mushrooms
- 30ml chicken stock or water
- 2dsp soy sauce
- 1dsp oyster sauce
- ½dsp black soy sauce
- ¼tsp sugar
- 10g sweet basil, torn
Cooking method
- Bring the wok to a medium heat, add the oil and garlic and stir until there is a good aroma. Add the beef and stir for 1-2 minutes before adding the onions, spring onions, peppers and chillies. Add the button mushrooms last and stir.
- Season with the soy sauce, oyster sauce, black soy sauce and sugar and finally add the chicken stock, pouring it around the edge of the wok to gather in all the ingredients and make sure the wok doesn’t cool down. Stir for just one minute to keep the vegetables crunchy.
To serve
- Add the sweet basil and serve with Thai jasmine rice.
Tip: You can use any mushrooms in season for this dish but half the bigger varieties.
